Maybe I’m cheating by having a Filipina mother, but here are just a few of the foods I grew up eating regularly:

squids cooked in squid ink (it was a really pretty purple color)

fish for breakfast, lunch and dinner - not filets either, but fried whole, heads and all. Lola (grandmother) loved eating the heads.

Suman[sp?]: very sticky rice treated with lye and wrapped in banana leaves, heated up, unwrapped, and dipped in sugar or coconut sauce

beef tongue

kare-kare: meat, usually chicken in my family, cooked with vegetables and peanut butter
I don’t eat any meat except fish now, so the ox tail, beef tongue and kare-kare are now things of the past. But I still love fish for breakfast, squid, and suman, and lots of other Filipino cuisine.

sliced cucumbers sprinkled in rice vinegar, salt, garlic powder, and a bit of sugar, dipped in spicy korean garlic sauce
