The thing about watching carbohydrates is that you get tired of the easy stuff. And there’s a glut of meat at the moment. I made pork chops the Tuesday. I have some left over. I made chorizo. Finished that off this morning. Wednesday was Wednesday Night Barbecue night. There was an extra guy to help with the eating, but I still have basically a full chuck roast grilled like a steak. And I defrosted some ground beef Sunday or Monday and never used it. I’d better use it.
I put the ground beef in a pan and sprinkled it liberally with garlic salt, pepper, savory and chili powder. I cooked it about half way, and then chopped up a half a dozen cerrano chilis and threw them in. What’s this? A jar of nopalitas? Drain, rinse, toss into the pan.
It’s actually a rather tasty experiment. And the chilis give it a nice kick. Too bad I can’t have corn tortillas. I can always wrap some of it up in a low-carb flour tortilla. It would be nice if I could have some sour cream, but… carbs.
