Well, maybe you could give us some hints as to what he likes to do.
I gave mine a set of freeze brands for the horses, but yours probably won’t be wanting that. For Christmas though, I gave him a custom made photo album filled with pictures I’d taken all year of him doing his hobby. He really liked that; I think lots of people would, although many wouldn’t be so livestock-intensive.
Well he likes sports (especially basketball), hiking, going to odd or unusual places. We don’t party, so that’s out…
I thought about a scrapbook or something like that, but I don’t know if it would be anything he would enjoy and I’m not very good at that stuff.
If he’s got a favorite basketball team (pro or college), see if you can possibly get a customized jersey with his name on the back. (and if he’s a former player himself, find out his old jersey number and have them put that on). The Girlfriend™ did this for me as a Christmas present, and it’s one of the coolest presents I’ve ever recieved.

Give him a gift certificate for his favorite guy store.
Take him to a comedy club.
Electronics. They always go over big. I got my husband a 400-disc CD player one year. He adores it.
If he’s an outdoorsman, organize a fishing, boating, skydiving, or whatever trip with a couple friends.
A tattoo.
