There’s the obvious one (the monitor plug) so what are the other 2 for?

I guess it depends on the model of card.

I have an Asus Geforce 3 Ti 200 , it has VGA out, S-Video out, Composite Out, S-Video In, and 3-D Glasses out.
Which is 5 jacks.

They usually have printing on the backplate labeling the jacks, but if not, maybe check on the manufacturer’s support site for documentation on the particular model.
