No, actually this was the one I made, although I cheated a bit and just bought a package of beef stew meat rather than browning a whole beef chuck and cutting it up. I just noticed he has a pressure cooker version as well.
I use them to make my own chipotle mayo. Just whip 'em up, with the liquid, with however much mayo you like in a blender and store in container with a tight-fitting lid. Makes anything you would use regular mayo for better.
When I make chili colorado, it’s kinda-sorta like that; just beef, onion, chile powder, and chiles. I used to use dried chiles, but I found they had an undertaste that didn’t seem right. The recipe you posted seems like it would have more depth than what I make.

You can definitely just bake it or cook in a slow cooker for whatever time you prefer. Since I make my own chili powder I use a blend of ancho, cascabel, guajillo, dried chipotles, and arbol. As I mentioned above I’ve modified his original recipe to suit my own tastes and that involves adding more chilis as well as some cocoa powder (sort of a mole sauce). I also add a little balsamic vinegar and worchestshire sauce since I think those add a lot of depth to any beef stew.
