Calling all cooks! What do I do with a Chipotle?

I’ve just bought my very first chipotle. What should I do next? Can I throw it into some chile? How hot is it going to be? Will I regret it the next morning?

Chipotle is smoked jalapenos I believe. It has been a while. Typically they are used for relishes (think pico de gallo or some other type of salsa), in stews/soups (chili would work), or in a stuffing (like picadillo which essentially taco meet with peppers and potatos).

I think it’s a smoked jalapeno. I add canned chipotles to mayonnaise. It gives it a nice smokey flavor and groovy pinkish color and goes great on turkey sammiches.

For all intents and purposes, you can do the same thing you would do with other chiles i.e. make chipotle salsa or use as a spicy seasoning if chopped up. It is essentially just a smoked chile so the flavor is a little mellower and sweeter. Check out this website www.allrecipes.com and search by ingredient :chipotle. Great site for cooks!

Chipoltle chilies are very hot…yes, these are smoked jalapenos usually purchased in adobo sauce in a can.

I’ve made chipolte remoulade before (like LolaCocaCola with mayo, cilantro, lime juice) and the recipe called for one chopped chipoltle chilie. If you use more than that it will be very hot…but some people like it hot.

I chop them up and use them in crab cakes to get a mexican flavor. Ambrosia.

I like them in chili, or in taco filling; anything like that

Canned (in adobo) or dried chipotle?

I use 'em in everything I can, every chance I get. My favorite use is to saute them (several chipotles, from the can–or all of them) in with some onions and (lots of) garlic (+comino, etc.), add some whole canned tomatoes, cook that mess down until the tomatoes are glossy, and then blend it smooth in a food processor for a hybrid enchilada/BBQ sauce.
