Had an extremely yummy roast beef dinner last night. So I have some left overs.
My husband always makes the gravy, and last night’s was especially tasty. Can’t say why, he made it the same as always, but it’s very yummy.
I got up today, read my emails and invited a friend for dinner. Walked the dog out to the grocers and picked up some bean sprouts to make Asian noodles with beef, bean sprouts, snow peas and bok choy, for dinner, for the three of us. Yum. ( Not enough left over beef for a repeat of the roast beef dinner, for three!)
When I got home and went to put the bean sprouts into the fridge I realized that, as good as my plan is, it’s kind of a waste of perfectly yummy gravy. Once the roast left overs are gone I’ll have no use for it at all! Seems a shame somehow.
I suppose I could scratch the Asian noodle plan, switch to hot roast beef sandwiches, (slice the beef thin, lay on fresh bread, smother with gravy, side of peas/vegetables), could probably stretch it out to fill three people.
But I got to wondering, if there were any other clever uses for this left over gravy that I hadn’t even considered.
What about meat loaf? I haven’t made that in a while and I do have some ground beef in the freezer. Maybe put a little gravy in and save the rest to pour over it, when served? It’s not how I usually make meatloaf, but it might work.
How about it? Got any suggestions for me? I’m all ears, do tell.
