Ummm… well I’ll eat them with ketchup and salt most of the time because heck if there’s nothing else then there’s nothing else to eat them with. But if I’m at home I adore Thousand Island salad dressing on just about anything, especially french fries.
Thank you Slacker for making that important distinction. However, I would go so far as to substitute the word “can” with will. Cheap catsups are nothing more than sugary tomato sauce and every bit as appealing.
As for myself, for regular fries, some Heinz ketchup and salt. For wedge cut spuds, I’ll go for the malt vinegar. I’ve tried the old mustard and ketchup routine, it’s interesting but not as addictive as one might hope. Surprisingly, I’m a total mayo hound, but I haven’t tried it on fries yet. Some day perhaps…
Here in Colorado we have a fast food chain called Good Times. They sell stuff for your fries called wild sauce, which kicks ass on fries. It starts from a base of Thousand Island, with probably some horseradish and other stuff thrown in.
I went to an Argentine restaurant here in L.A. the other day, and the waiter had sold us on their favorite appetizer–a plate of garlic fries. We thought we’d give them a try.
What came back is a huge pile of fries covered thickly with chopped parsley and loads of garlic. Now, I wouldn’t want my fries any other way.
Want them smoking hot, then lashings of kosher salt.
Malt vinegar rocks, but it can create problems with “limpness” issues.
And yes, yes, yes, Java, garlic rules!

I’m with Slackergirl on the “fries dunked in chocolate milkshake” - it’s yummy! My sister and I have eaten fries this way for a long time now (not the whole container of fries - just a few at the end for dessert).
