I’m assuming they keep the general area clean, perhaps sterilise equipment, have instruments prepared and ready for the dentist.

Am I correct ? Are there more duties for a dentist’s assistant ? What are they ?

A dentist works several chairs, one after the other. The assistants do all the stuff except the actual dentistry. What you said, plus some patient work.
