I like most kinds of fish. Trout and salmon are probably my favorites, but I do love a good tuna or swordfish steak.
Yep. Catfish is all over the map. I love catfish, but I’ve had the misfortune, as you have, of getting really muddy catfish. Yuck. Reminded me of carp.
Oops, missed the edit window. I really, really like unagi. I’ve long wondered what a jellied eel tastes like, but I have yet to get up the courage to try it.

Grouper seems to be quite popular here in Florida but I find it very bland. I don’t guess I have a favorite but after reading this thread I want to try Red Snapper again.
Striped bass is great, but I think that’s just an East Coast fish.
I married a Newfoundlander, so I am familiar with everything that can be done with every single part of the cod (including some that never would have occurred to me to actually eat), and I love them all.
In fact, I love pretty much any kind of fish. Freshwater fish is great, especially trout. Brown trout, brook trout, whatever. Best cooked right after catching, at your campsite.
I like the fishy-tasting fish, too. Monkfish, skate, etc. Even bluefish.
Afterthought: I’ve eaten something things in Japan that I didn’t know what the hell they were, but I liked them. I was taken to a sushi place in Tokyo by some locals, and put myself in the hands of the sushi chef. He didn’t speak a work of English. I don’t speak oa word of Japanese. I just kept eating everything he gave me. It was all great.
So far I haven’t found a fish I don’t like.
Other than tilapia, I’m game for most fish.
Favorites are fresh sardines, mackerel, pomfret, rohu and salmon.
I’m probably a little bit more picky when it comes to Other Sea Creatures.
Yes to about 99.999% of shellfish except for urchins, because urchins belong in Dickens and not on my plate.
No to sea cucumbers, jellyfish or anything gelatinous or squishy.
Too much guilt over eating squid and octopus these days. As my husband pointed out “you won’t eat pork because you say pigs are smart, so WTF is up with eating octopus?” I know it’s because he didn’t want to order that appetizer since he hates it, but it hit home (though technically I don’t eat red meat due to religious beliefs rather than intellect).
Absolutely no to dolphins, whales and any ocean mammal.
Rainbow trout sautéed in a little extra virgin olive oil, S&P, fresh lemon juice and thyme served with pan fried potatoes and red onions is the best damn campsite breakfast in the world.
We used to camp in Colorado and the one thing that would get the girls up early in the morning was the promise that we’d be back before they got up with fresh trout and they could sleep in or they could get up and eat but we weren’t leaving any leftovers.
My favorite too. Since you said you grill salmon, you should try grilling halibut sometime. Halibut cheeks are also great, but I have never cooked them, just restaurant fare.
Fish I miss from the east are a pan fried Flounder and Lake Whitefish from Georgian Bay (but that is a childhood memory that may be exaggerated by time).

Anything really except Basa which is Vietnamese catfish. I believe it is the stuff marketed as Swai. It isn’t unpleasant just basically tasteless, so not worth the effort when there are plenty of better options.
I’m lucky in that my partner works for a very upmarket fish wholesaler, so can get pretty much anything for free. Halibut is sublime and costs a fortune. My other personal favourite is Turbot - another firm, beautiful white fish you have to mortgage your house for.
Can’t stand Tilapia, utterly tasteless.
I remember back in the 60s and 70s, turbot was the cheapest fish in the market. My mom made it several times a month. I loved it then, but haven’t seen it much since. Maybe we ate it all.

Happens like that with fish. Ten years ago, pollack would be thrown back in the sea as no one ate it. Then celebrity chefs in the UK spent the last 5 years telling us to stop eating cod and eat the much cheaper and more sustainable pollack instead. Pollack is now more expensive than cod.
Coelecanth is alluring as an exotic fish, but a bit oily. Oily enough to act like Olestra and cause anal leakage in some folks, apparently.
I see it’s been mentioned plenty, but for me it’s catfish all the way home. Blackened or breaded in cornmeal, it’s the best fish there is and it’s available all over there place here in the sticks.
Actually as far as seafood goes, though, I’d much prefer scallops over just about anything. And shrimp and lobster and crab and … oh hell, why wasn’t I born on the coast??

I also am not a big fan of the fish. It all tastes, like mentioned above, fishy. Blech. However, I did have occasion to try Steel-head Trout a couple months back. It was grilled with just a light marinade (don’t even remember what kind) and it was phenomenal. Not even a HINT of fishy flavour.
I grew up hating fish, because of that “fishy” smell and taste. When I grew up, I discovered that the “fishy” smell is the odor of fish going bad. Really fresh fish smells of the ocean. Since I found a couple of fish stores that smell fresh and clean, I eat fish all the time, and haven’t touched red meat in years.
My favorites: Wild Alaskan salmon, Atlantic salmon, Chilean sea bass (tastes incredible with a vanilla-flavored butter sauce), Arctic char, cod, tuna, swordfish.
Good: Trout, flounder, tilapia, grouper, pollock, red snapper.
Not favorites, but they’ll do if nothing else is available: Mahi-mahi, catfish.
I don’t recall ever trying halibut or mackerel. Something to add to my list.
