“Anime” refers to animated cartoons done in the distinctive Japanese style – huge eyes, small mouth, simplistic faces, highly detailed everything else. Originated by Go Nagai about a zillion years ago in his comics.
“Hentai” is, from what I understand, a Japanese word meaning, roughly, “anime with sexual content”, ranging from nudity to hardcore sex to weird sex with nonhuman beings, anything from cute little teddy bears to hideous tentacled things that would scare H.P. Lovecraft.
Hentai is porn by deifinition. Anime is everything else, from giant robots to a guy who can’t get a date.

The word “Hentai” is the Japanese word for “strange,” “pervert/ed” or “weird.” It’s really more descriptive than anything else. I find it amusing to imagine Japanese video stores having a “Pervert Section.” 
Incidentally, you might run across an anime described as “ecchi.” It refers to anime that has sexual or obscene content, but not enough to qualify as hentai. South Park could be described as ecchi. It actually comes from the Japanese pronunciation of the letter H (or that’s what I’ve been told).
Fortunatly it’s like scat. I know what it is and I know that it’s done but I’ve never had the misfortune to actually see it.

I don’t think that’s as true now as it was 5-7 years ago. What I suspect you are thinking of is this fact: AD Vision, which is now one of the dominant companies in the American distribution marketplace got itself into that position via Hentai. For their first year or two, they were almost exclusively hentai other than a few oddball (though enjoyable) titles. They pretty much used the large amount of cash & the relationships generated to outbid others for some of the really big titles. I knew the director of marketing at the time. The stories he told me about american porn distributors that kept calling him for the stuff were quite hilarious.
