What is equivalent to corn bread mix

My stuffing recipe calls for corn bread mix. I can find corn meal, self rising corn meal, and corn muffin mix. My wife says none of them will do, but corn bread mix is not to be found. Is any of them equivalent to corn bread mix? If not, what is the closest?

Something like the Jiffy corn muffin mix can be used (and has directions) for both corn muffins and corn bread (the only difference is in the pan you use to cook it in). So I’d go with the corn muffin mix.

My wife notes that you need unsweetened cornbread/corn muffin mix to make good cornbread stuffing. Jiffy is a good choicel; it’s unsweetened. We buy Martha White (apparently a regional brand) which comes in both sweet and normal (unsweetened) varieties. But she and I both thought it was a good idea to flag the difference for the unwary.

I thought as much. My wife still doesn’t believe me and bought corn meal which I think she will then find a recipe for corn bread for, make that and use it. I will show her the responses, maybe she will see the light.

If it’s asking for “just add water and an egg” cornbread mix, then that mix is just corn meal, flour, baking soda, baking powder, salt, etc. It’s likely that you can just buy the corn meal and get away with just that, as you probably already have everything else you need to “make” cornbread mix.

Sounds right. But could you post the rest of the recipe so maybe we could figure out if this will work?

For your convenience, here’s the ingredients from the back of a box of Quaker corn meal*

1 1/4 cups all-purpose flour
3/4 cups corn meal
1/4 cup sugar
2 tsp. baking powder
1/2 tsp salt
1 cup skim milk
1/4 cup vegetable oil
1 egg, beaten

Omit the sugar, and include the salt, and you’ve got “corn bread mix.” I guess. This recipe looks like it would make a pretty weak corn bread.

Having just made cornbread last night, I can tell you off the top of my head that the recipe on the Albers cornmeal box has the same ingredients, but it calls for equal amounts of meal and flour (1 cup each), plus minor differences of amount of salt, oil, and powder.
