Meatloaf and shells and cheese, pretty pedestrian compared to some things posted here, but tasty, nonetheless.
To celebrate our mutual birthday, my partner and I went to our favorite Chinese restaurant and pigged out on *Eight Precious Pearl Duck, Honey Walnut Chicken, Mongolian Beef *and Shrimp with Cashews.
And we toasted our fellow birthday people: Julie Andrews, Jimmy Carter, Mark McGwire, Randy Quaid, Annie Leibovitz, Rod Carew, Donny Hathaway, Richard Harris, George Peppard, Laurence Harvey, Tom Bosley, Vladimir Horowitz, William Rehnquist, and Walter Matthau.
We brought leftovers home and shared them with the kitties and pups.
Then we celebrated with big pieces of my cousin’s irresistible coconut cake.
And now we are paying the price for pigging out way more than we should have.
Tonight I’ll be making Korean short ribs (kalbi). I bought a tray, so the rest will go into a marinade for a BBQ over the weekend.
Tonight we had Wanda’s Macaroni Salad. And you bet your ass it was totally corporated.

I have less than 20$ a week for most of my meals. The best I can do is a pepperoni, muenster, and hot pepper sandwich. It’s not bad, I guess, but that’s about all I can afford. I have some canned corn, cheap carrots, and green beans sitting aorund.
It’s not all bad, though. I get to eat out three times a week. By myself. One time will be a plain burger and fries. Another will be soup and salad and pancakes. All meals are generally under 10$.
Oh god I’m so alone.
Baked up some frozen chicken rolls (asparagus and cheese stuffing) and scallop cakes.
You know if you pour a bottle of chocolate syrup on top it makes a pretty good desert.
I’ve worked approximately 70 hours this week, mostly online updating online courses and handling other education-related online work, in addition to teaching my face-to-face classes, meeting with students, grading assignments, meeting with colleagues, etc.
My dinner tonight is microwave popcorn and whiskey.
I’m hoping this weekend will be work-free. But in order to ensure that, I have to work for the next several hours.
If you have fresh garden tomatoes, then just plain tomato sandwiches are astonishingly good.
Or just slice the tomatoes thinly, and let marinate in Italian dressing for half an hour. Add some sort of Italian cheese or not, as it suits you.
You know it makes 4 servings, right?
You say that like it’s a bad thing.
Yeah but it’s a salad. He can have 2 servings and not worry about it.
Just don’t eat 3 servings. You might die.

So you really have $50/week. Try EatingWell’s meals under $2. They’re delicious. Try getting some cheap spices in the Mexican aisle of your grocery store. Eat less meat; meat is crazy expensive. Don’t eat pepperoni; that’s a lotta salt and empty calories. Eat canned tuna or canned salmon or boil a dozen eggs and have 2-4 a day. Don’t eat all the yolks if you have 4 a day though! An egg costs 10-15 cents. Try lots of the vegetarian meals on EatingWell - as I say, it’s “vegetarianism for people who like meat” :). If you’re doing it right, you should feel a heck of a lot better too. Frozen precooked brown rice at Trader Joe’s is your friend. Frozen veggies are your friend - you can have a pound for $1-$1.25 on sale, whereas a can of veggies is generally 85 cents and gets you far less bang for your buck.

Really guys, try this if you haven’t. You will be amazed. My mom makes a version with more red wine vinegar than anything.
That spinach/peanut chicken recipe I posted up-thread would feed one person for probably three days, and the total cost was about $6. Edit: Make that $8. I forgot to account for the cost of the coconut milk.
Cheddarwurst lightly boiled for 3 mins, laid on top of a 99 cent Michellina’s Stuffed Peppers with garlic powder and hot sauce for the 2nd round in the nuke.
I’m capable of much more, but why bother?
Last night was baked butternut squash and grilled pork chops. Chops were seasoned with cumin, paprika and chipotle chili with a little salt an pepper. Sauce was caramelised onions, splash cream and blue cheese poured over the top. I also threw in some mushroom as they needed using up. Oh and steamed broccolli.
Tonight with likely be grilled sirloins currently marinading in lime juice, garlic, chipotle powder, olive oil and worcestershire sauce. Sunday is turkey meatballs with home made yummy tomato sauce.
Tonight we’re doing pork chops with a hoisin-based pan sauce, and then to make up for that highfalutin’ nonsense, we’re having tater tots on the side. Also broccoli with cheese sauce.
Teriyaki/garlic/Sriracha/brown sugar/soy sauce/sherry wine vinegar/sesame oil marinated flatiron steak with olive oil and garlic vermicelli and fresh pork-fat sauteed green beans with sea salt.
Nom nom nom.

it depends on how much you eat. I get very thin-sliced pepperoni, and it costs about a dollar for a weeks worth. It’s not deli: it’s pre-packaged, and has very few calories per serving. The advantage of it is that its a lot of flavor for very little calories and expense.
I use the hot peppers for spice, and they’re pretty good, since it’s a few bucks for 2-3 weeks worth of food. In fact, I often spend more of my budget on my mom than myself.
The hubby made a delicious broccoli and beef stir fry over steamed rice and delicious potstickers to go along with the dinner. First home cooked meal in a while and it was de-lish!
