What is (or was) for dinner tonight at your home?

We’re having spaghetti squash casserole tonight. There won’t be any cries of joy when the family finds out, but they eat it just fine, and I can console myself that I made them eat a vegetable.

purplehorseshoe, that’s exactly it - a blind baked pie crust. I use Pillsbury’s refrigerated crust as a) it’s pretty good and b) I can’t be bothered to make my own. The recipe comes from a family cookbook that some aunt or other put together ages ago. No idea where the nutrition info came from (not all the recipes in there have it), but it is handy!

As for the Zuppa Toscana recipe, there’s a bunch on the interwebs. Mine’s closest to thisone (it might even be where I got it).

My 19YO daughter is here visiting, convalescing from a broken heart. Her favorite all-time dinner is Jennie-O (brand) turkey roast, mashed potatoes, gravy, and buttered yellow corn. So that’s dinner for tonight (and some cranberry sauce, because I like it!)

Only had 3 pieces of bread left.

That’s so sweet norinew. I’m only a few years older than your daughter, but at 19 I didn’t tell my mom a thing.

I made chicken-n-dumplings. Mmm.

That’s what I’m fixing tomorrow night…with a batch of biscuits and a salad on the side.

Somehow or another, she’s managed to reach this age without ever going through that whole “I hate you, stay out of my life, you’re ruining my life!” stage. :wink: We’ve always been close, and I hope we always will be.

I’ve done something like that. Generally it’s a package of burrito seasoning, and canned refried beans. I’ve also crushed corn tortilla chips and used them for the tortilla layer, which works out well for a rectangular casserole dish. I started doing it when I realized that I didn’t HAVE to roll up those stupid enchiladas, I could just layer them while they were flat. I have a Pyrex measuring cup that holds a gallon, I think, which is just big enough that one tortilla will lay nice and flat in the bottom of it.

Glad to hear you can get properly spicy-hot food. Sometimes you really have to insist - Thai person spicy, not foreigner spicy!

I had a big lunch so I just ate 3 types of raw fish for dinner - the supermarket across the road has decent fish at good prices, so I am enjoying it while I can.

Tonight we’re having the roasted squash, apple, and onion salad from the newest issue of Martha Stewart Living, and kielbasa for protein.

Braised pork roast with lingonberries, homemade bread, and steamed cauliflower which I forgot to make so it’ll be cooked tomorrow to go with the leftovers.
