Occasionally in a British novel I encounter a reference to turkey or chicken with “sage and onion” stuffing. What is this? Ordinary breadcrumb stuffing seasoned with sage and onions, or something else?
I never thought of sage and onion stuffing as something alien or uniquely British. Whenever Americans have turkey on Thanksgiving, odds are the stuffing they eat is made with bread, sage and onion.
Oh, depending on your region, you may have cornbread, chestnut or oyster dressings… but I think the sage/onion variety is the most common served here, too.
