Hey, if you don’t mind a little unsolicited advice, I think that if you use butter in the pan to cook your steak you’ll have trouble getting the pan hot enough for searing without smoking the butter.
I make garlic oil by putting 40 cloves of peeled garlic in a quart of olive oil and cooking it on medium heat until they just start to turn brown. I turn the heat off then and let the oil cool, then strain the oil into a bottle. The garlic oil is what I use in the pan for all my beef cooking. It’s also great if you want to make some mayonnaise.
