A little more than fifty one years ago my wife and I had our first date at Taco John’s. We would miss them if we were no longer able to eat there occasionally.
My condolences on your loss.
I’m pretty good in the kitchen but I’ve never been able to re-create the special yum that is a fast food taco.
The shells are never quite right.

I’m trying to figure out why that would happen. The meat and lettuce and cheese have to be harmless. Is it the carbs in the shell of the tacos? Maybe the tomatoes? I think it’s the law that places have to provide nutrition information when asked, so I’d do that.
Do you use the sauce? Could they have added sugar to the sauce?
I’m wondering about two other things. Were the tacos the same size and type? If you switched from corn to flour tortillas, you would get 5 more grams of carbohydrates per taco. If the taco maker were a bit more generous with the filling, you might get more carbs too.
Were you less active that day than normal? Even taking the same amount of insulin for the same meal can result in a different blood sugar curve depending on your activity level. I’m sure you realize this but you might not have thought much about it if you were noticeably less active than normal on that particular day.

Corn tortillas always. Same tacos. Cheapest ones on the menu. I can use very little sauce. The meat substance(is it really meat, anywhoo?) is what worries me. Could they have added starch to extend it? Or sugar to flavor it?
We’ve looked online, to no avail.
I was at the diabetic clinic today and asked the nutritionist about it. After scolding me like her redheaded stepchild she said to avoid them for a few weeks to see if it changes. Real helpful Lady!
So we ate Chinese, today.
We’ll see how that works out.
I actually looked up the “nutrition” of a JitB taco once. The meat is part beef, part soy. That’s how they get that smooth texture, y’all! The price has gone up to 2 for $1.19 or $1.29. I had them a few weeks ago. My belly can only take that greasiness every few months. When I was young I could eat that crap almost daily!
Does anyone remember Two Pesos from the 80s? That was our go-to after bar stop in Houston. It was sit-down though.
I make homemade tacos all the time but sometimes a girl just wants nasty Jack In The Box tacos or Taco Bell. It’s life. The same way every once in a while I gotta have a banana split from Braums. They may kill me but imma go down happy.

We are far enough along I think… I used to LOVE Jack in the Box Tacos. They deep fried them and they where completely ‘shut’. Excellent when you’re 18, stoned and need a quick fill up. And you only had a buck or two.
I happen to be in Denver now. There is only one JITB left in ‘town’. And I’m not stoned or hungry (and it’s way too far away for that anyway)
Do not denigrate what is the joy of a good corn dog dipped in mustard.
Now I’m hankering for a corndog. Dang it.
We have a friend who wouldn’t stop eating Taco Bell gorditas even though they kept trying to kill him via his diabetes. Ended up in the hospital a few times.
I’m careful what I eat. I count carbs like a weight loss camp counselor.
I hoard and save so I can have them occasionally. It’s not everyday by any stretch.
I’m just getting less and less tolerant of anything.
Seems like I’m more brittle by the day.
Yes, I feel that pain too. However, even though the medical community hasn’t caught up with the science, the science has discovered many things about eating. Such as what you eat and drink before and after you’ve consumed a specific item affects your system. So, what set your glucose off might have been whatever you ate or drank before you had the tacos, and if you were to eat those tacos on a truly empty stomach or on a stomach that recently had broccoli might change your blood sugar differently than a stomach that most recently had Cheerios. Challenging, for sure.
There’s some literature that says I can consume a high protein item before hand. I’m not in the mindset to do any experiments at the moment.
