I made an excellent jambalya last week.
Put some oil in the bottom of a large pot, slowly heat while adding some flour. Stir the flour until it starts to brown. At the point put in onion, green and red pepper and celery, stir fry until just starting to turn soft. Add fresh garlic and sautee for about a minute.
Add 2 cups rice, 2 cups water, 2 cups boullion (seafood if you can get it, but chicken or beef works as well) the shrimp and whatever spices you like (oregeno, ceyenne, bay leaves, whatever sounds good), bring to boil, reduce heat and let simmer about a half hour.
