Being proud of your heritage is a little different than a grown woman being called an “Asian Princess”. You notice it didn’t say “Asian math genius” or “Asian future chemical engineer” (which are still stereotypes, but at least they aren’t demeaning ones).
How so? How am I supposed to get my servers’ attention at a busy restuarant or thank the guy at Sears that rung up my purchase. Say, “Hey you food lady” or “Thanks guy behind the counter.”?

You know if she decided to wear a necklace that read “Asian Princess” it would possibly be okay. Personal jewelry choices have a wider range. Even in the personal jewelry choice there can be a limit though: an Italian American wearing something that said “wop” or a Jewish person wearing something that said “kike” would be inappropriate. But her choice or his, on the nametag “Asian Princess” is inappropriate, worse if it was his choice.
BTW, the Penthouse fantasy that hh is in his bunk with, would also be inappropriate even if by apparent consent. A boss having a sexual relationship with an employee is too fraught with implied coercion.

Rather than run around all cloak and dagger, trying to get people into trouble, without knowing the facts, why not ask “Asian Princess” what she thinks of it?
Or you can call management and have them look into it, rather putting the waitress in a position of having to complain about her boss to a customer who can do very little about it. If management looks into it they can decide if it’s a problem, and may even have a past record of other poor decisions this store manger has made.
