Any recipe ideas? Or can you freeze it?

I have (at home- if you’re interested I’ll post it) a really good recipe for a cheesecake using ricotta (and parmesan). It always gets rave reviews.
And without all that cream cheese, it’s better for you. If you care about that sort of thing…
Ricotta pie, which may be the same as this ricotta cheesecake everyone keeps mentioning. It is sweet. And delicious!
We call it Peetz in my family. But outside I call it Ricotta Cheesecake. There is a savory version thats eggs and meat (ham, pepperoni, sausage) and cheese (mostly cheddar).
We serve it at Easter time as part of brunch, but I’ve also made it as dessert.
1 1/4 lb Ricotta
1 1/4 c. sugar
8 eggs seperated
1 t orange rind
1 t lemon rind
2 t orange juice
2 t lemon juice
mix cheese, egg yolks, sugar, rind, juice. Whip whites til stiff. Fold egg whites into cheese.
Bake in unbaked pie crust 450 for 15 min than 350 for 45 minutes
Makes 2 9" pies.

What’s wrong with sitting in front of the TV in your underwear with a plastic tub of ricotta cheese and a spoon?
I just finished making a lasagna, just a small one with one pound of ricotta. I always end up with a couple spoonfuls left in the container, so I add a packet of sugar or Equal, mix, and just eat it with a spoon. Yummy.
Ricotta pancakes are great.
4 eggs separated
2 2/3 cups ricotta
zest of a lemon or lime
squirt of honey to taste
1 1/3 cups flour with 1 tablespoon baking powder and 1/2 teaspoon salt.
1 1/2 cups milk.
Whisk together everything except egg whites, milk and flour mix. Slowly add flour mix and blend. Stir in milk. Beat egg whites until they have stiff peaks fold in to mixture. Cook like regular pancakes. Serve with fruit on top - apple sauce, berries, caramalized banana, lemon curd.
Is there enough left to make calzones? I’ve made them using premade pizza dough, ricotta cheese, mushrooms, and spinach. They came out much better than anything I make has a right to be.

You can also make a terrific omelette with it-just use as filling with basil and pepper and serve with salsa. Yummy, easy and low-carb, if you care.

Since you only have a pound of ricotta, if you use that recipe, use six eggs, a cup of sugar and a deep dish pan and make a single “cake” I’ve done it without the rind and it works fine (its better with, but fine without). You might need to add five or ten minutes to the baking time. It should “set” and be brown on top.
(Keep away from cats, they like it)
