What do I do with this cottage cheese?

When my daughter was home over Christmas break, I bought her some cottage cheese for lunches and snacks. I guess I overdid it, since she’s now gone and there is a full, unopened, one pound container of the stuff left in the refrigerator.

I’m not a big fan of cottage cheese so I’m not going to eat it by itself, but there must be someway to hide it in a casserole or something. Does anyone have any good ideas (and/or recipes) for how to consume a pound of cottage cheese without really tasting it?

You can substitute the riccotta in a lasagna with cottage cheese. Probably best way to hide it.

It’s possible to make reasonably good lasagna with it.

Pierogies filled with it aren’t bad.

IIRC, aren’t you supposed to fill your shoes with it for Yak Shaving Day?

Mix it half and half with ricotta for stuffed shells. Yummy.

My favorite leftover pasta dish:
leftover pasta
cottage cheese
1 beaten egg
chopped ham (if you want)
lotsa pepper
plenty of parmesan

Mix and heat in whatever amounts and order you happen to grab out of the fridge. Add frozen peas to give it some color and extra taste.

I’ve heard that a local restaurant makes a very popular cottage cheese omelet. Haven’t tried it but now I’m inspired to see if I can find a recipe.

Those who suggest that cottage cheese is a reasonable substitute for ricotta are heathens.

I’d put some of this stuff in lime jello, and add walnuts. I’d have to look up the recipe, but it’s a fairly good dessert. I’d probably also feed quite a lot of it to the cats, in spoonfuls, as I’ve heard that cats love it and can digest it well.

And I’d probably throw most of it away, as I don’t care for it, other than mixed in with the lime jello.

Look for freezer recipes like lasagna, stuffed shells or pierogi that call for cottage cheese instead of ricotta. Then you can use up the whole container before it goes bad and eat the results at your leisure.

(Meaning - you’re not going to use the whole thing in one lasagna.)

If you do use it in any of the pasta dishes, especially lasagna, remember to drain it very well first.

Mmmm, I’ve made this before. Good idea! Especially since I realize that I have an excess of dill as well.

I use cottage cheese as a potato chip dip. It’s also good as a snack with granola or just about any other non-sugary cereal.

Use it in lasagna, in place of, or mixed with, ricotta cheese. Run it through a blender, and use it in place of sour cream for baked potatoes, or nachos, or something like that. Mix the blender-smoothed cottage cheese with a spice, and serve it as a condiment. Maybe mix in chili spice, or curry spice.

1/2 c. cottage cheese
1/2 - 2/3 c. milk
1 banana
3 T. Ovaltine or 1 T. unsweetened cocoa and 2 t. Splenda
1/2 t. Instant espresso powder (optional)

Blend the pants off it - smoothie!

I sometimes put spoonsful on top of my dogs’ food to buy their love.

You must be one of those benighted souls who lives under the mistaken impression that pierogies can contain only potato and cheese. They can, in fact, contain a wide variety of fillings either sweet or savory. Beyond the familiar butter and onions, they may also be topped with many different things including gravy or goulash.

The cottage cheese pierogies are a popular holiday dish among the hunkies in these here parts. They are often lightly sweetened and dressed in a mixture of honey and butter. That said, I loathe the effing things and much prefer the potato and cheese variety with the stereotypical butter and onions.

I always sub cottage cheese for ricotta in recipes. Can’t help it–ricotta has a vomity taste to me. :frowning:

Top it with some jelly or sliced strawberries (I sweat mine with a little splenda/sugar beforehand) and a handfull of granola, mmmm!

I put some cottage cheese in many things that have cheese in them - it adds to the cheesy flavour and texture with another dimension of cheese (for example, I’ll add it to macaroni and cheese).

My wife puts it in pancake batter. They come out a bit heavier than regular pancakes, but altogether pretty good.
