I have this great new cookie recipe that calls for the zest of 4 lemons. Lemons don’t keep all that well once you’ve zested them, and really, the only other thing I use lemons for on a regular basis is making lentil soup. (And once a year I make a lemon angel pie that requires zest.)
I can juice the lemons after I zest them. But what should I do with the juice? Can I just keep it in the fridge? I do use lemon juice when I make fruit pies (although not very much.) What else can I do with lemon juice?
I prefer drinking water. I might enjoy a glass of lemon juice a couple times a year, but that’s not going to use up the lemons I’m generating. (But it did inspire me to ask about popsicles.)
That’s a thought… One recipe of cookies gives me about a cup of leftover lemon juice, though, and that’s a bit much. And it’s a good recipe for bringing cookies to events, and my daughter loves them, so I’m inclined to bake it somewhat regularly.
yeah, not going to eat nearly enough salmon to burn through the juice I’ve been generating. Especially since my husband won’t eat fish.
Lemon juice, diced fresh garlic, salt and pepper make a great marinade for Poc Chuc. Buy some pork (milanesa at a Mexican market) and marinate overnight. Place over hot coals a few minutes per side. Assemble tacos with your favorite toppings.
2 oz vodka
1/2 oz triple sec
1 oz simple syrup
1 oz fresh lemon juice
sugar for rim
[ul][li]Coat the rim of a cocktail glass with sugar and set aside (do this a few minutes ahead of time so the sugar can dry and adhere well to the glass)[/li][li]Add all the ingredients into a shaker with ice and shake[/li]Strain into the prepared glass[/ul]
My gf makes a delicious Greek lemon chicken soup that is so delicately flavored that I sigh after each sip. I’d offer the recipe, but she won’t tell me (she thinks that’s what keeps me from leaving her). *****
