What to do with lemon juice?

I have this great new cookie recipe that calls for the zest of 4 lemons. Lemons don’t keep all that well once you’ve zested them, and really, the only other thing I use lemons for on a regular basis is making lentil soup. (And once a year I make a lemon angel pie that requires zest.)

I can juice the lemons after I zest them. But what should I do with the juice? Can I just keep it in the fridge? I do use lemon juice when I make fruit pies (although not very much.) What else can I do with lemon juice?

Lemon garlic chicken. Or clean the microwave.

Shodan

Mmmm, except that I’m a food snob and don’t use garlic powder, that recipe looks good. I bet I can use crushed garlic instead. Thanks.

Lemonade.

I’d love to have a glass right now.

We make a pitcher of lemonade every week during the summer.

Spray cut fruit or vegetables with it to keep it from browning.

Dilute it and drink it. Lowers blood pressure. May help prevent kidney stones. Helps with arthritis and rheumatism.

Clean your cutting boards.

Treat stains on dry-clean-only clothing.

Hmm, I’ve been eating a lot of lime popsicles this summer. Maybe I should make lemon popsicles. Anyone have a recipe they like?

Pour the leftover lemon juice into your mouth. Drink. Mmmm!!!

Get some dill. Put the lemon and dill on a piece of salmon. Grill it.

I’m a weirdo who loves really sour stuff, so I’d probably finish peeling them and eat them like an orange or tangerine.

not all at once, mind.

I prefer drinking water. I might enjoy a glass of lemon juice a couple times a year, but that’s not going to use up the lemons I’m generating. (But it did inspire me to ask about popsicles.)

That’s a thought… One recipe of cookies gives me about a cup of leftover lemon juice, though, and that’s a bit much. And it’s a good recipe for bringing cookies to events, and my daughter loves them, so I’m inclined to bake it somewhat regularly.

yeah, not going to eat nearly enough salmon to burn through the juice I’ve been generating. Especially since my husband won’t eat fish. :frowning:

I actually do enjoy eating lemons. Maybe I should just plan to do that, over the next week or so. They’d probably keep that long.

Lemon juice, diced fresh garlic, salt and pepper make a great marinade for Poc Chuc. Buy some pork (milanesa at a Mexican market) and marinate overnight. Place over hot coals a few minutes per side. Assemble tacos with your favorite toppings.

Mix with vinegar, a few drops of dish soap and spray your garden weeds. Use caution though, this combination will harm any plant, not just weeds.

In your laundry, it supposedly makes your white clothes whiter.

I store leftover lemon juice in a small airtight container and it keeps for quite awhile.

Does that mean Alton Brown isn’t a food snob?

By the way, you could freeze lemon juice in ice cube trays if you have no immediate use for it.

Lemon Drop

2 oz vodka
1/2 oz triple sec
1 oz simple syrup
1 oz fresh lemon juice
sugar for rim

[ul][li]Coat the rim of a cocktail glass with sugar and set aside (do this a few minutes ahead of time so the sugar can dry and adhere well to the glass)[/li][li]Add all the ingredients into a shaker with ice and shake[/li]Strain into the prepared glass[/ul]

My gf makes a delicious Greek lemon chicken soup that is so delicately flavored that I sigh after each sip. I’d offer the recipe, but she won’t tell me (she thinks that’s what keeps me from leaving her). *****
***** an inside joke, I think.

That…sounds wonderful.

You could add a dash to your coffee or tea.
