The CSA keeps sending me boxes of these, and I’ve never played with them before. If you had a couple-three pints of tomatillos, what would you make with them?
Salsa Verde is the big thing. Substitute for tomatoes in any dish.

Salsa. Tomatillos are amazing in salsa.
Green posole/pozole.
You can pickle or fry them. Heck, first one and then the other.
Can you make gazpacho with them?

And definitely chili verde.
Was going to suggest Chile verde too. If you have a pressure cooker/instant pot, serious eats has a recipe which looks dead simple.

You can also just toss them in tomato sauce. Makes really good tomato sauce.
Pork chile verde is one of those dishes that rings in the end of summer for me. I’ll be craving it soon as cooler weather comes. Tip: Add a fat pinch of clove powder. It really helps.
Salsa Verde hands down. Then make some chicken enchiladas.
Salsa is what we always make with them. I’ve made a soup with lentils and tomatillos, but the “real” recipe calls for green tomatoes.
