What would be good with this dish?

I am thinking of making eggplant pancakes tonight. The ingredients are roasted mashed eggplant, garlic, shallots and parsley, with some egg and flour to bind it all together.

What do you all think would make a good sauce/condiment to serve with this? It seems a bit too bland on its own. Also, what would be good side dishes?

And don’t anyone say anything about maple syrup.

sounds tasty! i would make that the side dish to a huge chunk of teriyaki marinated, bar-b-qued tri-tip, glass of cab or beer and blueberry pie with vanilla icecream for desert!

Hi cher3… How about a roasted red pepper sauce?

2 T chopped shallots
1 lb fired/peeled/pureed red peppers
1 C white wine
1 T chopped garlic
2 T chopped parsley
1/2 tsp crushed hot pepper
1/4 C milk
salt to taste

So would I gatopescado but payday’s not until Friday.

That roasted pepper sauce sounds really good. I could do the peppers along with the eggplant. I think we’re getting close to a meal here.

I just wanted to let you know that I went with the roasted pepper sauce and it was a great combination.

Now that I’ve tasted the pancakes, though, I think they would be equally good with the chutney or with the plum sauce.
