There are only 3 adults this year in my household but I’m still making too much food. We’ve got the purchased pasteles and I’m about to put marinade on my pernil.
Got some lemon halves candy-ing on a pot on the stove for a lemon curd tart. Also on hand will be an apple crumb pie because 3 people need 2 pies. Tomorrow I think I’ll try some habichuelas guisada except I’m trying two things new. Gonna do it in the slow cooker and not gonna use any Goya products because 'ef them. Also some spinach for greenery only they won’t be very good for you cuz I’m sauteing them with garlic, onions and bacon.
Simplicity this year, low-key, just myself, my wife, and my parents. Horseradish crusted prime rib roast, potatoes au gratin, glazed carrots, and wasabi deviled eggs. Think my dad is planning to make peach cobbler for dessert, it’s one thing he and my mother can agree on, very rare
Just me and my gf this xmas. I’m deep frying a turkey, which my gf had ordered from the turkey store. She told me she got a small bird. Heh. It’s 18 pounds.
Since I’ll be occupied cooking, she’s making yams, stuffing, green bean casserole, and pumpkin pie. We’ll be eating leftovers for a week.
There’s me, Madame P., our daughter, her husband and our grandson. We all live together anyway.

Well, “yorkshire pudding” is made with beef tallow, and “popovers” are made with butter. And no doubt I’ll get some beef tallow from the roast, but I’ll likely just use butter.
So yummy! I just realized our Christmas will only be missing Arroz Con Dulce and coquito for a full blown traditional Puerto Rican Christmas. Sorry that the coquito recipe is in Spanish. Couldn’t find a good one in English.
Just me this year. Gonna make scalloped potatoes and ham. And make some nice turkey rice pilaf for the pupper. Hey, he gets to have a nice Christmas feast, too.
There’s just the two of us this year. We’re having corned beef with all the usual veg. Nothing planned for dessert. We’re hiding out in central Oregon, so there’s really not any place within 40 miles to go get anything either. I think we have the stuffs to make a coconut cream pie if we wanted.

We cooked a turkey yesterday, mostly for the carcas to make turkey soup which is currently simmering on the stove.
My FIL is being treated for throat cancer, so we have decided to make up a big batch of soup for him for Xmas dinner. Since Covid killed the usual Xmas get-together & dinner, we did a half-assed one last night and… thats really going to be it.
Doing Single COVID Christmas here, which is largely a repeat of the Single COVID Canadian Thanksgiving I did back in October. I got the smallest turkey I could find at the store, but it’s still a bit bigger than the last one. Oven roasting the turkey, with traditional Newfoundland savoury stuffing like my mom always made. Finding the proper Mt. Scio savoury in stores around me is harder than it used to be, but I discovered I can order it via Amazon, so I’ve got a whole jar ready.
I screwed up the schedule for cooking the potatoes vs. the turkey last time, so this time I’ve decided to go with potato salad. I can start it as soon as the turkey is in the oven, and it will be good to eat pretty much any time after the turkey is done. It will also keep for a few days, to go along with the many, many turkey sandwiches I have planned for the rest of the weekend.
Gonna try another Prime Rib. Got it rubbed down already, sittin’ in the fridge. I’ll do mashed potatoes and maybe some green beans. I don’t care who comes to eat it. I got dogs.
We eat our special dinner Christmas Eve, (leftovers tomorrow). We just had a pretty simple one this year. Standing rib roast, mashed potatoes, broccoli. And to start, risengrynsgrøt, with an almond hidden in one bowl for the prize.
It’s been fun teaching my kids the traditions I grew up with. Two years ago, my Norwegian mom was here to make the grøt, but I’ve made it before.
