What's for dinner tonight?

Yellow curry with red lentils and rice.

Pork roast, broccoli, cauliflower, carrots and ranch mashed potatoes.

The SO liked the salmon cakes and lemon-dill sauce. And the asparagus.

We’ll probably have leftover pizza tonight. Tomorrow I’ll do beef ribs.

I’m on a curry kick I guess. The yellow from last night was delivery. Today it’s homemade lamb curry. Darker and richer and a little spicier.

It’s hot and the weekend, so hot dogs, beans, mac salad and beer.

The ‘lazy ribs’ have been in the oven for two hours.

Seems longer.

Lamb curry…pumkin and rice!!

Romanian lamb mititei from my beloved Fresh Farms grocery in Niles, IL. Their mititei (pretty much the same as cevapi/cevapcici) are garlicky and highly seasoned with a bit of texture from the baking powder. These will be grilled over hardwood lump charcoal.

I’ll also be making lunches for the week tonight. I got some lovely Michigan zucchini which will be cut in to thick planks, seasoned with EVOO, sesame oil, S&P, oregano and grilled as above. There will also be some of Fresh Farms awesome house-made brats which I’ll brown over the hot fire before moving to a bath of simmering beer on the offset side of the grill.
I grabbed two ears of corn, an indulgence for this low-carber, also to be grilled.
Two dealies of mushrooms will be washed and tossed in hoisin and sriracha are going to see the coals.

Zucchini noodles with onions, broccoli, chicken and Alfredo sauce.

I went to a family gathering at my cousin’s house to see their new grandson. We had michigan hot dogs, macaroni salad, and sundaes.

This evening: Reuben sandwiches and baked beans, yay!

Last night was Penne Arabiata. Glorious, but I had to serve the chicken and pasta separately and store the leftovers likewise. We have a child in our household, old enough to know better, who will go into the kitchen at night and pick all the meat out of a dish, making the leftovers less than appetizing…Grrr!

I didn’t feel like cooking tonight, so I got one of those ‘rotisserie chickens’ (garlic) from the supermarket.

We needed a side, so I thought I’d use up the spinach that was in the fridge. I chopped the leaves and boiled them in salted water. I knew they’d ‘shrink’, but day-am! :eek: Came out with maybe half a cup? (Maybe more.) I put them into a sieve and used the little pot to make a roux, added milk, let it thicken a little, and then added the spinach back. When I reckoned it was done I added some cubes of feta cheese.

So little spinach! Better have potatoes, too. To late to cook them, but we have Potato Buds. Gravy? Didn’t feel like using the grease from the chicken. Out of chicken gravy packets. Made gravy out of roux, milk, and chicken bouillon.

So, yeah. Lazy ‘instant’ dinner. But tasty.

It’s still hot, so I grabbed subs from Jersey Mike’s on the way home from work.

It’s my birthday and my husband is out of town. Maybe I’ll have TWO Lean Cuisines. :frowning:

I have some leftover green curry sauce from my DoorDash order a few nights ago. This restaurant is really good, but they give you way too much sauce (which is a good thing, because… leftovers). I’m going to stir-fry some vegetables, add some tofu and heat up the sauce. Serve over rice. The curry sauce is pretty spicy, and I have a perfect bottle of Sauv Blanc to compliment it. Beer would be good, too, but I’m more of wine guy.

Or… hook up with a few friends and have dinner at one of my favorite restaurants. I’d probably have a nice Alaskan Halibut, grilled.

Beef stew. And bread.

Probably cereal or toast or yogurt. I have a lot of errands to do after work so I won’t be home until late.

I’m having a big lunch to compensate. :smiley:

Last night was ‘clear the fridge of leftovers’ egg fritattas.

Tonight is, baked farro with mushrooms.

Mine will be chicken with lemon-caper sauce and some fresh green beans.

Think I’m feelin’ quichey.
