Is the beetroot grated or sliced or what? I assume it’s cooked.

Pickled, sliced, uncooked.

I thought it was cooked Giles. My dear old mum used to roast her beetroot in the oven, then drown it in sugar and white vinegar to serve. On those occasions when we bought the Golden Circle tins, the texture and taste were similar enough that I believed the process to be the same.

That would be a completely different type of sandwich.
