White growth on shrimp

Peeling shrimp for dinner. There seems to be some sort of white puffy growth on the ‘head’ of the shrimp. It’s on pretty much every one of them. I’ve peeled many a shrimp in my time, and I’ve never seen something like this before. It almost looks like a little bit of cottage cheese is growing on top of each one.

Anyone have any idea what this might be? Is it okay to eat, or should I run screaming from the house?

I work at a restaurant, and have seen something similar, although we generally get our shrimp pre-peeled. I always figured it was caused by freezer burn, or the shrimp getting melted and re-frozen in transit.
