I cook quite well, but this would be a new one for me. Has anyone made home made beef jerky? Any good recipes? Should I be trying this at home without adult supervision?
I should probably point out that I don’t own a dehydrator, so oven-type methods would be best. All recipes, tips, and tricks appreciated!
Made great jerky from beef and venison many times but never in an oven. I had one of those “as seen on TV” dehydrators. They are fairly inexpensive but don’t make much jerky at one time.
I have a dehydrator, extra trays, and have made tons of jerky. My favorite is actually using ground meat and a jerky gun.
Try something like teriyaki for a first recipe. There are some good sites on the web with recipes.
Like this one.
I’ve done it in the oven. This is from my (shakey) memory:
slice up long thin strips of beef or venison, like about 1/2" x 1/8" x 4 or 6" or so. Sprinkle the strips with Lawry’s season salt. Glob them into a bowl and soak them in a mixture of whatever… such as Soy sauce, worchestershire, teriaki. soak 'em overnight or a few hours if you can’t stand to wait.
Now for the fun part. Stick a toothpick through the end of the strip, and use the toothpick to suspend the strip from your oven rack. Do you know what I mean? The ends of the toothpick balance across the rack, and the beef hangs between.
Put your oven on the lowest heat you can. Wait forever. Like all day.
Make sure to put tin foil on the bottom of the oven, cause they’ll drip all over. Also make sure to make alot. Don’t worry about how to store them. You’ll eat them all right away.
I made about 3lbs of jerky this weekend. I was looking for different recipes. Thanks for a most excellent link.
I have a deli style meat slicer so I get evenly sliced jerky. I love it!
