The cafeteria where I work has a very good bleu cheese dressing. It is flavorful and most importantly, pungetn, in a good way. Importantly, it is not terribly sweet. Yet, when I try to get bleu cheese dressing at the grocery store it is always depresingly sweet. I have tried buying the mass marketed brands and the more expensive specialty brands and no luck. Is there no good, not seet, bleu cheese dressing for sale out there?

Probably because the bottled stuff adds high fructose corn syrup or something stupid like that.
A friend of mine who knows a thing or two about cooking says Blue Cheese dressing is just Mayonnaise plus Blue Cheese.
I’ve looked it up through Google, and I don’t find any recipes that say its just Mayonnaise and Blue Cheese, but Mayonnaise is always the main ingredient.
This makes me feel funny. I’m not a fan of Mayonnaise but I love blue cheese. The experience of this discovery is kind of like that of discovering a Whoosh.
By the way, there are several bottled brands of Blue Cheese dressing which do taste to me exactly like Ranch Dressing plus Blue Cheese. I hate these brands.

My WAG is that you’re right on target. To lower the fat content, sweeteners are added as flavor enhancement.
Not all bleu cheese dressing is creamy or mayonnaise-based. Have you tried any vinaigrette-type bleu cheese dressings? (Riverhouse and Litehouse are two specialty brands sold in the Pacific Northwest) I realize to the dressing’s appearance in the bottle may not look that appetizing but it makes up for it in terms of being less sweet and having more cheese per ounce than your standard creamy brands.
