Yellow. Naturally!
Dark. I think yellow mustard is too bland. My favorite mustard is spicy Southwest style.

Not long after we moved to the Bay Area I went to what passes for a deli around here and ordered pastrami. They came out with a yellow mustard. I asked for deli mustard, dark, and the waiter looked at me as if I were crazy.
I came very close to moving back to New Jersey.

Brown maybe, German, Whole seed, Dijon are.
