Well, I’d put French as well, cause I think in the combination of most varied/very good food it trumps everything. But it’s a bit too obvious, and it’s gonna make me look like the “cant stop talking about the greatness that is France” French stereotype.
So, I’m gonna take Italian.
Chinese. TONS of variety. I’d never get bored.

I am, frankly, amazed at the amount of people who love Indian food. I had no idea it was that popular. Myself, I am Indian and I choose…Italian.
Anglo-Indian - most of my favorite “Indian” dishes were actually invented by or for Brits, hence the hyphenation.
I already said French, but with German on the table, I don’t think French could even put up a fight.

Indian, easily. I’d miss Mexican and Ethiopian and Thai and French and - well, a bunch of stuff.
In a perfect world (money and metabolism not being issues), I’d have French breakfasts and Indian lunches and dinners. Heaven!
American wasn’t forbidden in the OP, so I’m going with that, including the American cuisine most people THINK aren’t American creations, but actually are, such as many forms of pizza, and American Chinese.
For me it would depend on whether I had to prepare it or not.
I do love Korean food, but I am unable to get the flavor correct on many of my favorite dishes at home. I would have to fly regularly to Hawaii and Korea to get my favorites.
I enjoy Chinese food, but again, the proper flavor is not always attainable at home, nor do i have the high heat needed for proper wok-ing.
I also don’t think I could survive without a cheeseburger or steak for the rest of my life either.
I may have to sit this one out.
I’ll just stick with what I know best…Cajun & Creole. Talk about some comfort food and can be made on the cheap.
Definitely Indian, although I don’t think it’s really fair to have as a choice. It would be similar to allowing ‘European’ or ‘Asian’ as other choices.
Japanese, followed very closely by Mexican and Vietnamese.
Indian food is the UK National dish! I kid you not!
For me I would choose Indian (also Pakistani as I love lamb) Would miss Italian greatly also Thai, Chinese but Central Asian and Persian dishes would be on my mind eternally!
Hey can I choose Jewish Diaspora dishes? Then I could get the best of both worlds ( Even my Ukrainian Jewish GF cooks pork! )

I’m fairly confident I could eat Japanese cuisine every meal for the rest of my life. If cost isn’t a factor, I’m 100% certain.
Another vote for German, and specifically South German. A guy can never go wrong with a schnitzel. A nice Ramschnitzel, a pile of pom friets, a veggie salad and a beer could keep you going for days. The Barbarossa Hof in Kaiserslautern knew just how to do it.
Chinese, no question at all
Chinese - but only if it is all the cuisines in China. Definately changing my choice to Italian if it’s just one region like Sichuan, Shanghaiese, Beijing, etc. Note: Mandarin is not a choice.
I lived in China when pretty much all you could get was what was indigenous to that particular locale, and it sucked big time.
