Disclaimer: The poster is a professional chef. Please do not try this while intoxicated, as he did. He’s probably going to regret this at some point tomorrow.
Ingredients (quantities left to your discretion; The Chef was winging it):
Fettuccine Noodles
Classico Creamy Alfredo Sauce (this is good stuff, at least until The Chef comes up with his own alfredo recipe)
Aidell’s Spicy Mango with Jalapeño Chicken Sausage, sliced (I found this at Costco, no idea where else it’s available. But it’s tasty stuff!)
Sliced white mushrooms
Julienne’d yellow onion
Extra virgin olive oil
Habañero Jack cheese (I found this at Safeway; can’t remember the brand)
In one pan, sautee mushrooms, onions, and sausage in olive oil.
In a second pan, heat the alfredo sauce.
Chop up some of that fine habañero jack cheese, and add it to the alfredo sauce. Allow the cheese to melt, stirring it into the sauce.
Add your fettuccine noodles to the sauce, tossing until the noodles are well-coated with sauce.
Drain any excess oil from the sauteed vegetables and sausage, and add to the noodles & sauce. Continue to toss everything together.
Plate the results, and top with shredded Parmesan cheese, or whatever shredded cheese you prefer — I used a blend of mozzarella, Parmesan, asiago, and mild white cheddar.
Wash it down with your beverage of choice. My choice was Redhook ESB (my sixth of the evening), along with some ibuprofen to mitigate tomorrow’s regret.
