So we’ve passed the halfway point of Passover & most folks that observe may be getting a little tired of matzo by now? ( I love the stuff, but that’s just me)
I just made candied matzo. Spread with butter, brown sugar & cinnimon & bake in the oven at 350 for five minutes. Delicious!!
I also think matzo makes good pizza crust for mini pizzas.
So what do you do with it?
My wife makes amazing matzo toffee. A recipe here.
I like it best if you use the lightly-salted matzo… Gives you that perfect sweet/salty taste.
I haven’t tried it as such, but I imagine it’s a pretty good Nutella vehicle.
Then again, what isn’t?
It’s really really good with peanut butter, and it would be awesome with Nutella.
I Just finished off my third batch. The first batch went to work as a ‘test’. The 2nd batch was for my 2 Seders, and my 3rd batch ended up being for Seder #2. (Guess what happened?
The leftovers from batch #3 went back to work for those who missed out on batch #1. (and those who gave up sweets/chocolate/dessert for lent.)

I like the absolute classic matzoh brei [grape jelly]
mix some zatar in olive oil, brush on, toast til crunchy - passover fatoush!
blenderize hummus and drained marinated artichoke hearts and spread on a matzoh.
It can be crumbled up into as small pieces as possible, and put outside for the birds.
Of course everyone loves Matzo Brei, but I just invented Matzo Brie. Put a slice of brie on matzo and nuke for 10 seconds. yummy.
Much as I adore it in most of its iterations, it’s become nothing more than an ethnic laxative to me.
Pity, that. Pathmark Chunky Peanut Butter and home made spiced peach jamm is indeed the food of the gods.
It’s a laxative for you? It has the opposite effect on most of us.
“101 fun things to do with matzo”?
Okay, we’ve ruled out eating it…
It’s a fine stand-in when going the chips-and-salsa route.
Charoset and horseradish. Feed the rest to the birds.
Some things I like to do with it:
Put some sliced cheese on it, then microwave for 20-30 seconds, until cheese is bubbling. I like pepper jack cheese on rye matzo.
Put baba ganoush on it.
I like peanut butter on matzo, too.
In previous years, I’d make a deli turkey sandwich on matzo. Can’t do that this year, though, because I’m pregnant and deli meats are on the no-no list.

Not Jewish so I don’t know what is kosher or not but I love Matzo and so does my mom. When I was little she’d cook some liver and onions and then make a paste out of it in the food processor and then spread it on Matzo. I always felt she was destroying the Matzo. I like it plain but it’s good for pretty much anything I’d use bread or crackers for.
