I don’t sauce up the meat while it’s cooking either.
I opted to use the slow cooker because it’s the only way I’ve prepared it and I know it works. I thought about slow roasting them all in the oven with just a rub, but I don’t want to “experiment” on over 30 people.
Hence, the slow cooker method with the cider vinegar and other ingredients in the slow cooker.
I serve the BBQ sauce on the side. Not everyone likes BBQ sauce, so I figure they can add or not. I prefer it mostly without BBQ sauce, but sometimes will add some.
I just hope my friend remembered the coleslaw.
I was up early shredding last night’s roasts. Twenty four pounds of meat! It will not of course fit into my slow cookers, even shredded; so I’ll have to use the electric roaster thingy I have as a chafing dish.
Two new characters: The people we’re staying with: Sassy Chica and her husband Clown
Sassy Chica is from the Rio Grande Valley. Last night I taught her how to make plain white rice. She had only made Mexican rice before. After hearing her recipe, I want Mexican rice next time.

Taters I’m all for the slow cooker usage. Og knows mine gets a workout on a regular basis. I start ribs on the smoker and finish 'em up in the slow cooker. They are so tenderfalloffthebone gooooooooood!!! I say call your friend re the coleslaw and remind that you managed to cook a bazillion pounds of poke so he/she can bygawd remember to chop up some cabbage. I say the supplier of meat can get away with such.
We’s all brekkied and full as ticks. Steak for dindin tonight along with friggin’ good N.O.T. and sallit. I do not foresee any N.O.L. happenin’ after that hughe brekkie. If’n OYKW feels the need there’s sammich stuff.
I pretty much plan on nuttin’ today. I shall be a bear of leisure. Nappage will be good.
Actually, said friend is laying out quite a few buckaroos for this party. She’s ordered all kinds of food trays/party platters and also supplied the rolls/buns for the pulled pork. When she told me how much she’s paid so far, I told her not to worry about the cost of the meat. Really, I got off much more cheaply than she did. Another friend is splitting the cost of the party platters and other stuff.
I need to hop into the shower very soon here. I kind of want to go to the maul and take a quick cruise through Macys and Penneys and see if I can find a new top for tonight’s shindig. Something somewhat dressy, but alright to wear with jeans too.
The birthday girl plans on dressing to the nines tonight, but seeing as how we need to be there early to move furniture and help set up, I want to be somewhat comfortable.
gotti yikes! Good for you for requestin’ a detailed bill. I’ll bet there’s stuff on there that can be disputed. Hope the healin’ continues to be good. How’s DH doin’ with his post op?
[/QUOTE]
No need for me to dispute anything as the whole thing is “free” for me as I hit the annual out of pocket max a while ago.
DH is doing well. He’s lost about 30 pounds so far, and I’ve managed to drop 12 myself just because I’m cooking and eating differently now.
Call back the search parties and panic no more - I’m fine!!
I got up pseudo-early today and immediately donned grubbies so I could put a coat of primer on the stairwell. When I was done, it was 10:30 and **FCD **was up. We showered, dressed appropriately for venturing out in public, then ventured out. Stops included lunch, Target, a shoe store, Dick’s Sporting Goods (where I got some water shoes for the trip), the local Hyundai dealer to sit in a Sonata (nice car!!) and the marina to check on the boat. It’s 64° here and I was surprised how many sails were out on the river - beautiful day!
We’re now in for the night. I see 2 more episodes of The Tudors to accompany general slugging.
Good morning. I am sleepy and completely worn out. I drove over 300 miles yesterday and had a great time!
Today is church (rah) and then I’m not sure what else since I don’t know when the Bubster will be coming back home from his slumber party with my dad. I may wander off again if I don’t have to worry about watching him until later. Today is the last day that he’s going to be on a special diet so we’ll see what happens.
Well, apparently we’re not going to church today since my grandpa is a bit under the weather. Guess I’ll take the dogs out in a bit and go back to bed for awhile.
Good Mornin’ Y’all! Up and caffienatin’. YAWN ‘Tis 48 Amurrkin out and foggy. Today’s high is predicted to be 74 with a chance of rain. This is also tomorrow’s forecast. Winter in south Jawja is interestin’ at best.
Today is the Annual Parrish meetin’ at the church house. The Vestry presents the budget for the year, we get to hear all kinds of reports from different organizations and last, but not least, the Parrish elects three new members to the Vestry. Sounds excitatin’ don’t it! Also, today is “The Feast of The Baptism of Our Lord”, so there will be a baptism. A good friend’s grandson is the baptizee. ‘Twill be a rollickin’ good time down at ol’ St. Pat’s!
StickyBuns goin’ back to bed for a while is a good thing. Hope grandpa feels better soon.
Now I must seek more caffiene and rumbly tummy wants to be fed. Then, purtification for deheathenization etc must commence.
Mornin’. Up and recaffienating, waiting for everyone else to get up for deheathenization. My big plan for today is to find my old camp and see if I can wander around if it’s not raining. If it is raining, movies. There is also A Talk scheduled for today, if it didn’t take place last night. Not involving me, between Clown and Culinary Boy regarding Culinary Boy’s recovery.
Good morning, all! **FCD **and daughter have gone out on a breakfast date, followed by a shopping adventure to get Cozmo a coat. I’ve had some quiche and caffeine followed by a shower. Laundry is sorted and the first load is washing. Some time today, I’ll take the inlaws’ computer to my computer geek friend, hoping he can fix it. Plus all the talk of poke yesterday got to me, so I’ve got a small roast in the crock pot.
Thus beginneth my day.
And the executive decision has been made - tomorrow I call the vet and arrange for Scruffy to be put down. Twice last night after midnight, she barked to go out, but when I took her out, she just walked around in a circle and came in. She’s been doing that more than not. But when she needs to pee or poo, half of the time, she doesn’t bark at all, and I end up cleaning the carpet. The other day, I went to let her out and she stood there, then walked into the wall next to the door. And I’ve lost track of how many times I’ve stepped on her, kicked her, or nearly tripped over her because she plants herself at my feet and I don’t see her. I’m really afraid that I’ll either kill her by stepping on her or she’ll hurt me because I trip and fall. Each thing by itself wouldn’t be a big deal, but putting them all together… I’m sure there are those who would call me cold and heartless, but I don’t see a choice. I can’t cage her all day and night, and honestly, she doesn’t seem to be living, just existing. It’s time.
Saturday was a good day. We went looking for a smoker but Bass Pro was out of stock of everything so we looked online somewhere else and found one we think we like. We also had a super lunch out, walked along the river for a bit as the weather was fantastic yesterday, ran some errands and bought a new couch and loveseat which is being delvered today and grilled steaks for dinner. Yum!
I have been up since 4AM coughing as this damn cough will not disappear I am hoping I don’t end up having to go to the doctors. Grrrrr. We have been for brekkie and we are waiting the delivery of the furniture. We should probably move the old stuff out of the living room before it gets here…
I’m sorry you have to put Scruffy down, FCM. I know too, how hard and painful that decision is to make.
We had a nice time at our friend’s big birthday bash. Although there was quite a crowd at one point, there certainly weren’t 30 people ever.
Consequently, although a definite dent was made in the pulled pork, there was a significant amount left over. Considering there was 24 pounds of it, I was hoping for a larger dent. I took home two of my large containers worth (one for me and my husband, one for my daughter and her boyfriend); I left the rest for my close friends to use.
People did like it though, and went back for seconds and sometimes more. So that made me feel good. I always worry that someone isn’t going to like what I prepare.
The hostess ordered waaaaaaaay too much in the way of party platters. She has so much food left over. She send two of the platters home with us, but we really didn’t want them because, well, it’s just the two of us. She wanted to send us home with more, but we put our foot down. Besides, where the hell am I going to keep them?
Good lord, I cannot shake this cough and my sinuses are still plugged up. I am hoping this isn’t going to turn into some kind of sinus infection.
{{{MOOOOOOM and Family}}} Scruffy has been well loved and cared for. Her last few years were good years in a warm, safe and loving home. Take comfort in knowin’ that y’all done good by Scruffy. She knows it and everybody here knows it too.
Taters glad every thing went well at the partay. Hey, leftover pulled poke! That’s always a good thing cause, well, pulled poke sammiches. How could that ever be bad, right?
I’s home from deheathenization and church bidness. Three new members to the Vestry were elected. We had a short vestry meetin’ afterwards to approve the December financials and [del]railroad[del] elect to office the Senior and Junior Wardens for the new year. I am pleased to report that I ain’t either one of 'em. Also, N.O.L. has been consumed and da bear wants a nappy poo,.
I was just awakened by a text letting me know that Bubba will soon be arriving home from his weekend outing. So, now I’m up and contemplating what to fix for N.O.L. There isn’t much let here to eat. Did I mention awhile back that my dad was trying to help my grandparents and decided to rearrange some cords in a way that made it logical to unplug a power strip that included my chest freezer? :dubious:
Oh well. There’s still potatoes. I guess I’ll start there.
Nappage has been achieved. 'Twas a good one too! It’s weirdly warmish out. I was outside just a bit ago in just short sleeves. In January. Imagine!
I need to consider some sort of sustenance for dindin. OYKW is at his place doin’ laundry. Maybe I’ll go grab a pizza or swipe the General’s dindin and take it over to his place in a little while. That could be a good plan.
Thanks to my old crock pot, which is now a dead piece of crap, my poke didn’t get done, so we went to Bert’s for a burger. We’ll have poke tomorrow - I transferred it to the big slow cooker, but now I have an excuse to get a new crockpot! yay!
Off to assume the knit position and veg in front of TV. Laundry is all done and folded, waiting to be put away. Critters are mostly tended to - fish have an hour to wait yet. Life is good at FairyChatEstates. Do we have a volunteer for tomorrow??
