Oh my goodness, this one’s easy. I, um…can’t remember the last time I followed a recipe beyond glancing at one for ideas and then adjusting it to whatever I felt like at the moment, but this one was very, very simple.
Possibly because I used the crock pot and didn’t have to babysit the stove 
Since I’m using up whatever’s in the house in preparation for a move, I didn’t get fancy, didn’t add any of the normal vegetables; just whatever was right with me.
So…
Meat- I used beef, 'cause I had a nice chunk of top round/London broil in the freezer I wanted to use up. That’s very easy to dice up, especially when it’s still slightly frozen or at least not completely defrosted. Don’t worry about the exact sizes, just make 'em sorta bite-sized.
-Toss 'em into the crockpot and add seasonings. Salt, pepper, garlic whatever, onion whatever <real garlic or onion of you want, too> and I’m in love with Cavender’s Greek Seasoning, so I toss a bunch of that in there, along with whatever dried green stuff is in the spice cabinet, like basil or oregano, think I even tossed a little sage in there for fun. This is where your mileage WILL vary, I am sure 
-Chop up a bunch of potatoes, any kind; I peel mine, but it’s probably not necessary. Throw them into the crock pot on the potatoes
-Add water to just cover it all
-Add some boullion cubes if you’ve got 'em. If not, some dried soup packet mix, or anything like that, will work.
-Oh yeah, a little worcesteshire for yumminess, though you can do this later. Same with corn; just dump frozen corn in there whenever you think about it. Can be towards the end, don’t think cooking it the whole time will impart more corn flavor or anything, but I could be wrong, and it wouldn’t hurt the corn.
–Crock pot on high for a few hours, and a couple hours longer if the meat isn’t tender yet. It WILL get tender, no worries.
–I cheated on the thickener, and used up a gravy mix I had in the cupboard, and then used some cornstarch-water mix when the graviness wasn’t gravy-like enough for me.
Season more to taste, if you want.
Um…done! Tastes better than I expected since it’s so lacking in normal stew ingredients.
If you do this on the stove…well, I’m lazy now with the crock pot. It’s just so EASY, plus no stove on when it’s 120+ degrees out is nice. On the stove, same thing, except keep on low heat after a while and stir lots.
