Those are very unusual looking! I think I’d cut the bacon into smaller pieces so that every bite gets bacon and you can have a round pancake. Mmm, bacon!

I’ve done bacon waffles using cooked diced bacon in the batter. There was not as much bacony taste as I was expecting. I think the trick would have been to sprinkle extra bacon pieces right on the waffle iron before pouring in the batter to try to get more contact between the bacon and the hot surface. Or maybe I just needed a lot more bacon in the batter.

Those do look good, although I agree with the notion that perhaps cutting the bacon into large pieces and distributing them throughout the batter might be even better.

And Mahaloth…you seem to pop up in every bacon-related thread! I thought you were in treatment!

A good meat & pancake combo I’ve done is a sausage sauce I made by removing the casing from a few sausages and cooking them in a bit of water stirring constantly till it saucified then tossing that on top of some fluffy pancakes. That was good.

just a bacon equivalent to toad in a hole … though i loved bacon or sausage with maple syrup but I cant eat it now =( I can just manage a bit of ham in a sandwich. sob

While I’m sure they’re delicious, when I saw them I could only imagine the crotch panels cut out of Janet Reno’s BVD’s. Doughy skidmarks. :eek:

I’ve tried bacon in batter before, and it was unimpressive. I actually enjoy a traditional pancake sandwich better. (Pancake, eggs, bacon, pancake, syrup. Butter can go inside and/or on top of the sandwich.) It’s kind of surprising that blogger seems to think pancake, butter and bacon is such a revolutionary combination.

There was a place in California that served bacon pancakes back in the early 70s. They really loaded them up, but I’m pretty sure the bacon pieces went into the cakes just before they were turned, rather than into the batter. Slather in butter and some blueberry syrup. ::drool::

Old Bacon Pancakes

Not pancakes but waffles. My parents did bacan waffles by putting the batter in the waffle maker, putting in one strip of bacon per square, then more batter, then bake. As a child I was shocked that every one didn’t do waffles that way.

I’ve had them at a pancake house restaurant, but they cook them with pieces of bacon mixed into the batter.
