Best dinner this week!

Halibut steaks (from Trader Joe’s, frozen but taste fresh) - cooked on George Foreman grill for about 8 minutes
Ginger-soy sauce on one, fresh lemon juice on the other
Salad
Teriyaki noodles
In a few hours - something chocolate

(slight drawback - fish smell in house may attract stray cats)

Homemade Mashed Potatoes
Steamed Broccoli

And Blue Bunny Turtle Sundae Ice Cream for dessert.

Yum. I love being able to cook.

My best meal this week was also a real surprise, since it was extremely last minute and we made the recipe up as we went along. I took some boneless chicken breast and chopped in into stirfry size pieces and stirfried it in peanut oil mixed with a bit of sesame oil and a little garlic and ginger. Added some fresh green beans and stirfired it all together and seasoned it with soy sauce. In a separate pan I prepared 2 packages of those new Lipton brand Asian Noodle Side Dishes in the Teriyaki flavor. When both pans were done, we stirred them together and served it. I also had some frozen lumpia (Filipino egg rolls) that my husband had bought from a guy at work with a Filipina wife. I fried those up and served them on the side. Oh, and pineapple chunks. Good stuff, Maynard.

I made a killer potato soup last night… mmmmmmmmmmmmmm

I made a strange little something that has no name…yet.

Chicken breast, mushrooms and spinach layered with lasagna noodles and cheese, with white sauce.

Chicken lasagna sounds so blaaahhh…

Spicy shrimp and pea pods.

Nice yummy gulf shrimp marinated in garlic and soy and cooked about 3/4 of the way done. Then I stir fried strips of green and red pepper added soba noodles, the shrimp made a thai curry paste sauce and mixed that in then I added chopped fresh cilantro and peanuts.

Desert crepes filled with irish cream-white chocolate mouse (sp?)

Take a nice home made enchilada sauce and add to it some cooked diced chicken, rice and cheese and serve in wraps…mmmm…

My SO stumbled across one of these on his cooking night. Sea scallops sauteed in soy sauce then mixed with Green Giant szechuan vegetables (I’m pretty sure it’s Green Giant and not Bird’s Eye). This was fast and really tasty!

I suppose tonight’s dinner doesn’ fit in this thread…

a pack of Toastchee crackers and some Outpost brand Kippered Beef Steak (ok, it’s jerky, basically).

Ever so healthy and just the thing for the grad student stuck on campus between classes. :smiley:

Tomorrow I can cook though.
