On the off chance this isn’t a rhetorical question, it’s because men and women are different when it comes to sex. Men evolved to be ready (even eager) for sex at the drop of a hat. Women, not so much.
No, No, No. She meets Penny, they fall in love with each other, dumps Sheldon and the guys minus Sheldon, of course, video bug Penny’s apartment and watch the ensuing action…no, wait that was a porn video I was watching last night…never mind.

True Story: Friends of ours reported that they heard cries of “Yippi-ti-yi-Yay!, Oh Yippi-ti-yi-Yay!” drifting down from the bedroom of the apartment above theirs. So this is completely believable.
I like the idea of keeping them as a couple, but the tension in their relationship will hinge on whether or not they will be able to stay together despite their combined social awkwardness factor. An on-again/off-again relationship, with the tension based not on whether or not they will have sex but on whether they can stay together despite their general weirdness.
Now that would be hilarious!

I didn’t mind the stunt casting for the part, and her dialogue was brilliant, but unfortunately the acting was way off. The actress confused ‘matter of fact’ with ‘emotionless monotone’.
She was on an ep of What Not To Wear a while back. Her pre-show wardrobe was, indeed, really horrendous. She posed quite a problem for ol’ Clinton and Stacy, 'cause she just wouldn’t play along with their cookie-cutter fashion ideas. Also, she’s an observant Jew, so she had some modesty guidelines that you could tell were throwing them for a bit of a loop.
She’s quite cute though, even in deep hopeless-nerd disguise. Ironically, she looks rather like the young Elena Kagan.

Which makes her perfect for the role. The idea of Leonard and Sheldon both scoring bodacious babeage is mind boggling.
