Canned Milk

what’s the difference between condensed milk and evaporated milk? I’ve neer been able to figure that out.

From Condensed vs Evaporated"

"Both evaporated and condensed milk begin as fresh milk. The milk undergoes a vacuum process that evaporates over half the volume of water and concentrates the nutritive part of the milk. Evaporated milk is then poured into cans that are heat-sterilized to prevent spoilage. The ultra-high temperatures of sterilization cause the milk sugars to caramelize and give evaporated milk its characteristic cooked taste. In the end, evaporated milk has the consistency of light cream and a tint that ranges from ivory to pale amber.

Condensed milk is basically evaporated milk with a lot of sugar added (up to 2 1/3 cups per 14-ounce can) before it’s canned. The result is a thick, gooey, and intensely sweet product. Since large amounts of sugar prevent bacterial growth, condensed milk doesn’t need to be heat-sterilized and has a less caramelized flavor than evaporated milk."

An then there’s “filled milk”, which is availible in some parts of the country and also sold in cans. It is evaporated skim milk with vegetable oil added to replace the butterfat. Mmm-mmm-mmm!

When I went TDY to Guam, the chow hal… er, dining facility served filled milk. Every last one of us was convinced they used coconut oil. Heck, it tasted of coconut. Few of us really liked it, but it was better than putting water mixed with powdered coffee creamer on your corn flakes.

Baloo: You’re not at all mistaken; filled milk IS made with coconut oil.

U.S. v. Carolene Products Co., 304 U.S. 144 (1938).

Section 62 of the Filled Milk Act: “It is declared that filled milk, as herein defined, is an adulterated article of food, injurious to the public health, and its sale constitutes a fraud upon the public. It shall be unlawful for any person to … ship or deliver for shipment in interstate or foreign commerce, any filled milk.”

Ah! Sweet vindication!

It would only have helped if that law had been on the books when I was TDY to Guam, and maybe Korea, too – we think the chow hal… dining facility was using filled milk there, too. Coconut-flavored milk is not a suuitable substitute for the REAL thing.
