Why is evaoporated milk wet? Why wouldn’t it be dry?
When they say evaporated milk, they mean that part of the water in the milk has been evaporated away.
I always wondered about this one too. What would you call it if you didn’t call it evaporated milk? Any ideas?

See, they already have condensed milk, but it’s something completely different. Evaporated milk has a thick, milky texture, sort of like half and half without all the fat. It is an ingredient in pumpkin pie…
Condensed milk has the consistency of caramel – really thick, plus it usually is sweetened (mmmmm).
dry milk is called powdered milk, usually.
Just because there is still liquid doesn’t mean it isn’t evaporated. It just means it isn’t fully evaporated.
Example: I leave 8 ounces of water in a cup on the table a day or so goes by and there is now only 3 ounces. If someone asks me where the water went, I’d say “it evaporated.” But clearly there still is some water left.

Well, the Britannica does not come out and say it in so many words, but the article on Dairy Products - Specialty Milks pretty well indicates that “evaporated milk” simply means “partially evaporated milk.” The linked article discusses both the processes and the uses for condensed, evaporated, and other milks.
