I noticed that whenever you drink evaporated milk it has a unique taste. Since by mixing an equal part of water to an equal part of evaporated milk you get a product that is nutritionally the same as milk, why does it taste so different?
Is it the heating of the milk or the can itself that makes it taste so unique. It seems to be the same taste from brand to brand as well.
Heating the milk to get rid of the water causes some caramelization in the milk, giving it that unique taste.
You should also know that there is evaporated milk which has no extra sugar added and condensed milk with is extra sweet because of added sugar.
You could probably get a similar taste if you microwaved milk on a low power setting for a few minutes.
Drinking condensed milk by itself is probably the best way to bulk up because of all the calories in such a small container. If you consider getting fat as bulking up.
It is just too easy to drink a whole can in a single sitting without extra thought. Those things are just so sweet and gooey. It’s a good thing I have touched the stuff in years.
When I was a tadpole, my father used to make a dessert for us simply by stripping the label off a can of condensed milk, removing the lid and placing the can directly over a very low flame on the stove (after drinking off some of the milk). I was given the task of constantly stirring the milk until it caramelized completely into what was essentially caramel pudding. Lovely stuff. Haven’t had it since I was a kid, but I can see a can of condensed milk in my future the next time I go to the grocery store.
That unique taste makes it a great addition to things like white sauces. It also makes for a differently yummy hot chocolate. And it’s tremendous in tea and coffee. My mom always had a tin of Carnation in the fridge and I have me evap, too. I’ve found some excellent recipes on the backs of the labels - Carnation Fudge is absolutely the best!
