Carrot Cake

Love carrot cake. Like the chocolate too. Not the chocolate as much as the vanilla…

I love every kind of cake. I think I would rank German Chocolate the highest, but carrot with cream cheese is wonderful.

Alton Brown has a Breakfast Carrot Cake that I make for my husband sometimes, since carrot cake is his fave (and yes, he does eat it for breakfast).

It doesn’t include raisins; neither Alton nor my husband like them. I will throw some coconut in if I have some. It’s a single layer, so it usually gets a lemon glaze instead of frosting.

I love carrot cake, but I prefer it without all the extraneous stuff that some recipes include: no raisins, no pineapple, no coconut, no nuts of any kind.

There are other cakes (see: hummingbird cake) if you must have those things :slight_smile:

Related side-note: if you have a juicer, the pulp that’s leftover from juicing carrots makes a great carrot cake

But then you’ve got carrot juice that you have to get rid of somehow. Carrot juice is just wrong.

Carrot cake with nuts and buttercream frosting is my favorite kind of cake.

I don’t have a strong opinion on adding raisins.

That’s why Ivylass is wrong about not frosting the sides! Eat the cake part then treat yourself to wedge-shaped frosting supported by a backbone of goodness. Make sure you have a good cup of coffee to back it up.

Carrot cake for breakfast. How can this be a bad thing? If you want to make it better though, there is one simple thing to do. Make up your carrot cake batter then cook it in a waffle iron! Top with mascarpone and toasted pecan syrup.

I thought I was the only one! When I tell people exactly that (like nuts fine, but not in baked goods, because of the texture) they act like it’s the strangest thing they ever heard. So glad to know there is at least one more in the world.

Give me a pumpkin bar or banana sheet cake over carrot cake if you want that kind of dessert. It seems like half of a slice of carrot cake is the frosting. It wouldn’t be a bad thing except the frosting is usually cloyingly sweet and overpowering.

And carrot cake should have nuts…

It’s dense, too. I couldn’t eat all my slice tonight.

Nothing much to add other than I’d frame my mother for a steady supply of Carrot Cake.

Carrot cake is definitely one of my favorite desserts. I like nuts in anything you can fit them into, and might as well add raisins- makes it all the healthier, right? :wink:

Anyone else experience this tho? You eat out, and one of the desserts is carrot cake. So you order a slice, and they deliver a monstrously huge SLAB of cake. 4 - maybe even 5! layers tall, seemingly weighing a half pound or so! Yeah, yeah - I’m as much a fan of excess as the next guy, but seriously? Who the hell has room for that size of a dessert after a full meal? And the kicker is - in my experience, all too often those towering examples are dry and flavorless, emphasizing appearance over taste.

Some of the tastiest carrot cake I’ve had has been of the humble sheet pan variety, frosted only on the top.
