Carrot Cake

It seems all the men in my life, my father, my husband, my BILs, to a lesser extent my son*, adore carrot cake. My father said he would swim a shark tank for a slice of carrot cake. I was wondering whether to bake carrot cake or chocolate chip cookies and Ivylad immediately said, “Carrot cake!”

So, my two layer carrot cake, with raisins, walnuts, and pecans is cooling. I will frost the top layers of each cake (but not the sides!) with cream cheese frosting, and sprinkle the top with walnuts.

I’d prefer a slice of chocolate cake myself, but I’ll help Ivylad eat it.

*My son doesn’t like carrot cake with nuts. It’s a textural thing with him. He likes nuts fine, but not in baked goods.

I’ll take carrot cake over chocolate chip cookies any day. Not that I don’t like chocolate chip cookies, but a carrot cake is something SPECIAL.

Chocolate cake? Does nothing for me. It’s not that I wouldn’t eat it, but it’s my least favorite cake.

Now I want carrot cake.

I guess you can put pineapple and coconut in a carrot cake too. I haven’t tried that.

I’m a little odd but I don’t really like carrot cake. I like carrot cake muffins! For some reason, a slice of carrot cake just seems wrong but put the exact same thing into a muffin and I’m all over it like a Jack Russel terrier on a gerbil. I can’t explain it.

I adore carrot cake and it is always what I ask for before my birthday. That and really good bread pudding are my favorite desserts by far. I can take or leave chocolate chip anything and chocolate cake is simply no good and I pass every time. I think carrot cake should be elevated to much higher in dessert status than it currently is.

Eh, there’s nothing wrong with carrot cake, but given the choice between carrot cake and anything chocolate, I’ll take the chocolate every time.

I suppose that if I ever find myself at a party with the ivykinsmen, we won’t be fighting over the desserts.

Love, love carrot cake. Pineapple is good in carrot cake and coconut cake. But I’m not choice-y. Chocolate can be very bad if not done well. My SIL makes a very good Chocolate Texas sheet cake. Now I want sweets. Aaarrrggghhh!

Arguably, carrot cake is just a delivery vector for cream cheese frosting.

As far as cream cheese frosting delivery systems go, I prefer a pumpkin bar to carrot cake, but that’s mostly because people generally refrain from adulterating them with gross nuts.

Carrot cake is amazing. I like it best with no ‘extras’ but I’ll tolerate nuts. But absolutely no way on raisins.
However…you’ve heard of carrot cake…but have you heard of carrot cookies?? Omg I love those so hard.

I love carrot cake! (Not a fan of it with nuts or raisins, though). I love anything with cream cheese frosting, really. Granted, it’ll never beat a good red velvet cake, but it’s still a fave.

All versions of carrot cake are yummy, but my ideal carrot cake would have pineapple and no nuts. Don’t really care one way or the other on the raisins.

Cuisinart used to publish a wonderful cooking magazine and one of their themes, spread out across several issues, was “America’s greatest cakes” or something to that effect. Carrot cake was their first featured recipe. They suggested either cream cheese frosting or a rum sauce. In all the times I’ve used their recipe, I don’t believe I’ve ever tried the rum sauce. Cream cheese frosting rules.

Cake frosted, walnuts sprinkled on top. Ivylad calls it a success. Of course, he will need a second slice to confirm his hypothesis.

Oh, and if I’m going to have carrot cake, I’d prefer it with walnuts, without raisins. Walnuts can be boring on their own, but there are a number of baked goods they complement nicely.

Love carrots, love cake. Never should they meet. Not a fan. Just isn’t right. Whatever floats your boat.
