Crêpes, for a quick sweet fix

The SO said she wanted something sweet. I said we had truffles, but she didn’t want chocolate. That gave me an idea. (She suggested I make beignets, but I didn’t want to stay up that late.)

Crêpes.

1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons butter, melted

Whisk together the flour and the eggs. Gradually add in the milk and water. Add the salt and butter and beat until smooth.

We had some frozen mixed berries, so I put them in a bowl, sprinkled them with sugar, and nuked them for a couple of minutes. I used them to fill the crêpes. A sprinkle of powdered sugar, some whipped cream, and Voilà! Sweet tooth cured!

When you make crêpes for your SO you know that later that night it’s going to sexy time!

ps- Next time try adding a shot of Grand Marnier to your batter

I do Clafoutis occasionally, for the same reason. The link says Black Cherries, but just about any berry/fruit works. A lot of the same ingredients as crepes - a good thing, since most of these seem to be standard pantry items.

Got the cheese dip on the stove, and have been grabbing chips and eating it for a while. Planned on Wiener Schnitzel, mixed veg, and parmesan noodles for dinner. Turns out the SO has a hankering for crêpes. So we’ll have the veal another day.

I’ve got the batter mixed up, and the SO is taking charge of the blueberry-cream cheese filling.
