Cupcake poll

How exactly are vegan cupcakes different from regular cupcakes? I’m mentally going through the list of ingredients, and all i can come up with is the eggs…is that all?

Any dairy – butter, milk, cream cheese – is out, too. Also, some vegans either don’t eat sugar or will only eat sugar made by certain companies or only eat beet sugar, because cane sugar is usually processed using charcoal, which may come from animal sources.

I wouldn’t turn any of them down. But my first choice would be number 3.

Now I really, REALLY want a cupcake.

Stargazer pretty much got it! I’m not superstrict about the sugar thing, but some vegans are.

Bad news for my taste buds, good news for my waistline, the bake sale was cancelled. I’m considering making some anyhow since I was all geared up to bake.

Damn you, now I want to force my husband to get in the kitchen and bake me up some more of the pumpkin choc chip/cinnamon drizzle. Those things are freaking awesome.

That book is killing my waistline. Softly.

Oh, I would so love to get the pumpkin chocolate chip recipe, if you’re sending them out.

I’m in that club :smiley: At least the pumpkin chocolate chip is pretty easy to make. What else have you made from it? I think I’m going to try Boston Cream Pie or Banana Split next.

We failed utterly at the Boston Cream Pie. For reasons relating to the wrong agar, we couldn’t get the custard to work. We do need to tackle that one again at some point.

Other than that, he’s made the basic vanilla and chocolate, both good, the low fat vanilla, good but not great, we made the mexican hot chocolate together (to die for!!!), he’s made the carrot cake several times by request of an otherwise carnivorous friend of mine, and we made the smores ones which made me think I’d died and gone to heaven. (The only non-honey grahams we could find were the adorable little Annie’s bunny shaped ones, which I think enhanced the finished product.)

And not from that book, but we made these delicious jelly-donut ones that are filled with jam. The recipe was floating around the internet from an article about vegan cupcakes. The batter is this perfect yellow cake batter, and I adapted that and made plain cupcakes with chopped glace cherries and almond flavoured pink icing. Those were yummy, but I am a sucker for glace cherries.
