Years ago I tasted these at a friend’s house. They were delicious. Then I saw Julia make them on tv and wrote down the recipe. Now I can’t find it.
What it is is dark chocolate ganache rolled into balls, rolled in nuts (or crumbs), chilled, then deep fried. YUM!
You eat them right out of the fryer. They have a nice crispy shell with warm chocolate just inside, and a still chilled center.
Can anyone tell me what they’re called, or link me to a recipe? Ive tried to wing it, but good chocolate is expensive.
I wanna seduce someone special.

It seems the ‘skill’ is in chilling the chocolate beforehand and then ensuring the right batter mix. Good luck.

If you don’t have time to make the deep-fried truffles, you can get a warm chocolate fix from microwaved M&M’s (just put them in a single layer and nuke for about 20 seconds, repeat if they’re not melty enough). Good for an afternoon pick-me-up!

I suspect I could be bribed into all sorts of immoralities with those things, but I don’t know about seduced. After tasing one of those babies, I suspect whatever pleasure a mere human could induce would seem, well, second-rate!

MagicEyes, these thing’s will put melted M&M’s to shame. Try it, and don’t cheat on the preparation. You can make them ahead, up to the frying part, and leave them in the freezer. Then take out a few at at time and fry. The whole point is the sweet, crunchy shell, followed by the melty chocolate, and that followed by the still cold center.
Mmm.
