My family makes our Deviled Eggs like this, but instead of Thousand Island we use Kraft Sandwich Spread (it has a lot of the same properties of Thousand Island, but isn’t quite as sweet, and thicker. This means your egg yolks aren’t as runny.) Mix a big glob of it with the egg yolks, taste, and add more. I also add pepper, maybe a dash of garlic salt, celery salt, some worcestershire sauce, a dash of hot sauce.
Most people that try my family’s Deviled Eggs have proclaimed them the best they’ve ever had. My roommate has offended her own mother by proclaiming my mom’s better. But it’s SUCH a simple recipe, there’s no reason for all the turmoil. Sandwich spread and egg yolks is really all you need. The other stuff is just icing on the metaphorical cake.
(On the mayo vs. Miracle Whip issue: Miracle Whip all the way. I made my chicken salad with mayo once, when I was out of MIracle Whip. BLECH! It was very bland.)
