I got me some dinosaur kale at the farmer’s market this weekend. I did a quick Google, and some sites say that it’s milder and sweeter than regular kale, and some sites say that it’s more bitter. :dubious: Anyone have the Straight Dope, or a good recipe?
If not, I’ll probably default to beans ‘n’ greens, or Left Hand of Dorkness’s famous kale and tofu with peanut sauce.
I find it to be more tender and mild than regular kale. I’m not sure I would describe it as “sweet,” but it does have a nicer flavor, in my opinion. I almost never buy regular kale, but I buy dinosaur kale all the time.
