The fact that my fellow Texans will argue endlessly about whether beans should be in chili tells you that both are essentially acceptable. I like them either way.
Beans (and not only kidney beans) on the side are great, and I want to control the meat & chiles to beans ratio. Mostly I prefer rice on the side with my chili con carne, and sometimes a tortilla.
I also like variations of which carne is used. Chicken, lamb, goat, are all fine. I’ve even had rattlesnake and alligator chile that were delicious. How chili came to mean only kidney beans with ground beef and some peppers for a large swath of the country is beyond me.

I legit can’t even conceptualize chili without beans. Leaving aside how delicious it is, the combination of fiber and protein is a winning nutritional choice. My husband is allergic to tomatoes so I make white chicken chili with pinto and cannellini beans.
I am not in the least interested in reading the bowel movement thread; which doesn’t seem to be an option, so I didn’t vote. I have no objection to talking about shit in some contexts, but har-de-har it’s shit! doesn’t appeal to me.
– I think beans-or-no-beans is orthogonal to meat-or-no-meat. I’ve had chili with beans and with meat; chili with beans and with no meat; and chili with meat and no beans. I can’t remember whether I’ve ever had chili with neither beans nor meat, though I think it’s quite possible that I have, and in any case I’d be willing to try it. Pretty much all the chili I’ve had has been good, though some of it is too hot for me and I think I’ve had a tofu version in which I wasn’t wild about the tofu.
There was no both option for the chili. When I was younger I had a thing about beans. Didn’t like the texture. At some point I got over it. I now prefer chili with beans but I like it without just fine.
Ahem. We have it in Arizona, too, along with chili colorado, the beef stew with red chilis the Mexicans started with before the Texans got their hands on it. Pozole, too.
Pretty sure it doesn’t count anywhere you spell chile with an “i”.
(Maybe if our soccer team gets better we can transfer that competitive energy to sports. We just haven’t had anything but chile to work with all these years!)
I can tell you guys, right? I find the bowel movement description thread utterly hilarious, and I’ve been reading the replies to Mr. Legend, since we’re the only people we can have that kind of discussion with. Our daughter pointedly put in her headphones.
I’ve had chili soup, and that’s what chili without beans is like for me. I like either, but I mostly eat chili with beans. I like all varieties: with, without, kidney (we make ours with a combo of kidney and pinto), black, canneloni, red sauce, green sauce, white sauce). All fine if I’m in the mood for it.
